When most people hear canopy cleaning, they picture the stainless steel hood above the cooktops.
It makes sense, because that is the part of the system you see every day.
But the canopy is only the first stop on a much longer journey.
Every time your kitchen cooks, grease-laden smoke and vapour are pulled up into the canopy, through the ductwork, out through the exhaust fan and onto the roof.
Grease can build up at every one of those points, and the parts you can’t see are often where the biggest build-up is hiding.
Here’s how grease travels through a commercial kitchen exhaust system, and why good canopy cleaning services follow it all the way to the roof.
How grease travels through your kitchen exhaust system
1. The canopy
The canopy captures grease and smoke from cooking.
The baffle filters inside catch a lot of it, but not all of it.
Fine grease vapour passes straight through the filters and keeps travelling up into the system.
Grease also collects on the inside of the canopy hood and in the plenum behind the filters.
2. The ducts
As grease vapour moves through the ductwork, it cools and condenses onto the duct walls.
Over time this builds into a sticky layer that keeps getting thicker.
Because ducts run above ceilings and through walls, this build-up is out of sight.
It’s also the part of the system where a fire can spread quickly if grease ignites.
3. The exhaust fan
The rooftop exhaust fan is what pulls air through the whole system.
When grease coats the fan blades and housing, it can throw the fan off balance, make it noisy and reduce how well it extracts heat and smoke from your kitchen.
We cover the warning signs in more detail in Commercial Kitchen Exhaust Fan Cleaning: Signs Your Fan Needs Attention.
4. The roof
Grease that makes it past the fan can end up on the roof around the fan housing.
It can build up on roof sheeting, stain and damage the roof surface and, importantly, create another fire risk well away from the kitchen.
Why cleaning just the canopy leaves a gap
A canopy-only clean can make the kitchen look clean, but it can leave grease sitting in the places that matter most for fire safety:
- Hidden ductwork that keeps building up grease between cleans
- A greasy exhaust fan working harder and extracting less
- Grease on the roof that nobody sees until there’s a problem
- No proof of what was cleaned if an insurer, landlord or inspector asks
That’s why we treat canopy cleaning as a full-system clean, not just a wipe-down of the hood.
What professional canopy cleaning services should include
When you’re comparing canopy cleaning services, ask what’s actually included.
A complete canopy and exhaust clean should cover:
- Degreasing the canopy hood, inside and out, including the plenum behind the filters
- Cleaning the baffle filters
- Degreasing the accessible duct run from the canopy to the roof
- Cleaning the rooftop exhaust fan blades and housing
- Checking the roof area around the fan for grease build-up
- Access panels where sections of ductwork can’t otherwise be reached
- Before and after photos, plus written documentation of the work completed
Documentation matters just as much as the clean itself.

How often do you need canopy and exhaust cleaning?
It depends on how much you cook and what you cook.
A kitchen running charcoal grills, woks or deep fryers every day builds up grease far faster than a light-use café kitchen.
Australian Standards and your insurer set the minimum maintenance requirements, and many busy venues need cleaning more often than that.
After we’ve inspected your system, we’ll recommend a cleaning interval that suits your kitchen, so you’re not cleaning too often or leaving it too long.
Signs your canopy and exhaust system needs cleaning
- Grease dripping from the edges of the canopy or filters
- Filters that look dark, sticky or clogged soon after cleaning
- Smoke and heat not clearing from the kitchen like they used to
- A noisy, vibrating or struggling exhaust fan
- Grease stains on the roof around the exhaust fan
- Your last full-system clean was longer ago than you can remember
